Whenever we have leftover bananas that are too ripe, I’ll make a banana nut loaf.
This time around, I went a step further and made this Fall Maple Bourbon Banana Nut Loaf.
Mixing a Banana bread recipe with nuts is common, as is adding other fruits or chocolates.
Today I’m sticking with a moist banana loaf with added walnuts inside and on top.
The banana nut loaf will be flavoured with Bourbon vanilla, vanilla and maple extract.
For those of you who aren’t keen on using maple or vanilla bourbon.
This still makes a fantastic banana bread either way, with or without added flavouring.
I consider a loaf and bread the same thing as desserts.
Am I wrong or right? Both Mrs. CBB had a small debate over this.

Buying Ripe Bananas At A Discount
When I’m not sure what I will make with bananas that must get used up, I peel and freeze them.
Food waste in this household is slim as we stay on top of what we have and make sure it gets used up.
Given that bananas are inexpensive, if you look on the reduced rack at the grocery store, you’ll likely find them reduced.
I’ve even gone as far as asking the produce employee if they had any ripe bananas to sell at a lower cost.
Another cool way that I picked up fruits, including bananas, is by purchasing a $5 box filled with vegetables and fruits.
To find this awesome deal, you must download the Flashfood app to your phone, and local Loblaws stores will show in your area.
When you click on one of the Zehrs, Loblaws, RCSS etc., shops, it will show you what they are selling for reduced prices.
I’ve seen some food products for sale up to 75% off, and it’s an app that is totally worth the few minutes to sign up for.
Banana Nut Loaf Flavours
I’ve made so many recipes with bananas over the years, including banana nut bread/loaf.
As much as I love pure banana nut bread this time around, I chose to add Maple and Bourbon extract flavouring.
We had guests coming over, so I made a loaf of the Maple Bourbon Nut Bread, and it was cooling as they arrived.
About 10 minutes we all had a cuppa coffee, and Mrs. CBB offered them a slice of the Maple Bourbon Nut Bread once it was cooled.
She apologized that the loaf was cooling and not quite ready to slice.
We were all standing in the kitchen, and he chuckled as he saw my set-up for the banana nut bread.
I was hoping to take photographs for the blog before they showed up, so I did it when they were here.
He laughs and says to me, “Are you one of those food bloggers?” haha. I said, not a chance.
They raved about the Maple Bourbon Banana Nut Loaf, saying it tastes like a copycat Starbucks Banana Bread.
Since they both loved it, I gave them all of it to take home and said, no, I don’t take orders. Ha!
Then came the text for the recipe, haha! I knew that was coming, so I gave it to them.
Other Banana Recipes I’ve Made
Using ripe bananas to create recipes leaves you with limited options or variations.
For example, adding different extracts, such as I did for this Maple Bourbon Banana Nut Loaf, is an option.

You could also add 1/4 cup of chocolate chips to this recipe for added sweetness.
If you don’t fancy walnuts, use a nut you enjoy, such as pecans or sliced almonds.
How To Make Maple Bourbon Banana Nut Loaf
The most important element of this Maple Bourbon Banana Nut Loaf is making sure that the bananas are ripe.
Just offer one to your family, and if they won’t eat, then it’s perfect. That’s how we end up with a few extra bananas each month.
Ingredients List
- 3 very ripe bananas mashed
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 teaspoon of salt
- 2 large eggs room temp
- 1/3 cup melted butter
- 1/3 cup avocado oil
- 2 cups of Self-Raising Flour
- 1 Tablespoon Baking Powder (if you’re not using self-raising flour add 1 1/2 Tablespoons Baking Powder instead of 1)
- 1/4 Teaspoon Baking Soda
- 1 Teaspoon ground Cinnamon
- 2 Tablespoons of milk
- 1 Tablespoon Pure Vanilla Extract
- 2 Tablespoons Vanilla Bourbon Extract
- 2 Tablespoons Maple Extract or the immitation Maple Extract
- 1 cup of Chopped Walnuts (or Pecans) Save 1/4 cup to sprinkle over top before baking and the rest goes into the batter.
Putting The Maple Bourbon Banana Loaf Together
- Pre-heat the oven to 350 degrees
- Prep Time 15 minutes
- Bake Time 1 hour
- Set Time : 1 hour
- Total Time 2 hours 15 minutes
- Yield 6-8 slices
Instructions
You can make this in a large bowl or using a mixer. I used a Kitchenaid Mixer for this recipe.
- Add melted butter, eggs, avocado oil and sugars together into the mixer until combined.
- Put the mashed bananas and milk in the mixing bowl along with the extracts.
- Once the wet ingredients are mixed add the dry ingredients flour, baking soda, baking powder, cinnamon and salt.
- Once combined the batter will be thick which is what you want
- Remove the bowl and gently fold in the walnuts (leave some for the top)
- Grease a large 9×5 deep ceramic loaf pan (these I find make the BEST loafs and breads)
- Line the loaf pan with parchment paper
- When the loaf pan is ready for the oven place a sheet of Aluminium foil lightly over the top to stop it from baking the top too fast.
- After 45 minutes take the tinfoil off for the last 15 minutes of baking time.
- Stick a toothpick or knife in the middle to see if it comes out clean, if not add 5 minute intervals until it’s done.
- Let cool for 1 hour before slicing.

Maple Bourbon Banana Nut Loaf
A moist and easy Maple Bourbon Banana Nut Loaf that you can freeze for up to three months.
Ingredients
- 3 very ripe bananas mashed

Notes
Let the Maple Bourbon Banana Nut Loaf sit for an hour so it slices clean. If you make this ahead once it cools put it in the refrigerator to chill before cutting, even better.
