- Garlic Cloves
- Ginger Root (Fresh, peeled, and minced)
- Pineapple juice (fresh or bottled 100% pineapple juice)
- Soy Sauce
- Brown Sugar
- Chicken Breasts (I used boneless skinless)

How to make the Hawaiian Marinade
- Make the marinade for the chicken.
- Add the chicken into a large bowl or pyrex dish with a cover like this.
- Pour all or half of the marinade over the chicken in the bowl, and cover it with saran wrap (see notes below).
- Put the chicken in the refrigerator. Let the flavors meld until you are ready to grill the chicken.
Recipe Notes:
Use the reserved amount to pour over the rice. Or save it to use for a different recipe on another day. Use within a few days. Do not reuse the marinade you mix with the raw chicken! It will be contaminated.
How To Grill Chicken With Marinade
- To grill pull out the chicken, add it to a prepped grill, and grill on each side for 5-8 minutes or longer for thicker cuts of chicken breast.
- Make sure to get an internal temperature of 165F degrees.
- Remove from the grill and let the meat rest for 3-5 minutes.
- Serve with the pineapple mango salsa.

Notes
Tips - Make sure your grill is clean and oiled lightly with vegetable oil. Use a paper towel before the grates are hot to spread it over the grates. Do not turn the chicken over before it loosens. It will turn a white color halfway through and then when it loosened flip the chicken to finish grilling.
If reserving the marinade separate it into another bowl or jar. Use the reserved amount to pour over the rice. Or save it to use for a different recipe on another day.
Additionally, if you are cooking more than 1 lb. of chicken you will have plenty of the marinade to use.
