This easy to make gluten-free peach berry cobbler can be made with fresh or frozen fruit and is delicious all year long!

I turned up the volume on this summer cobbler by creating a delicious golden milk biscuit. Turmeric, cardamom, and cinnamon, the warming spices in golden milk, pair beautifully with seasonal fruit! 

Serve with vanilla ice cream.

INGREDIENTS NEEDED TO MAKE THIS RECIPE:


Fruit! – I used seasonal and fresh peaches, blueberries, and raspberries. Any stone fruit or berry combo would work, frozen fruit will also work.

Coconut Palm Sugar – You can use brown sugar as well.

Arrowroot Starch – Also called arrowroot powder, if you don't have this ingredient in your healthy baking pantry I highly recommend purchasing it. Arrowroot helps improve the texture of gluten-free baked goods and is the perfect thickener for sauces, soups, and gravies. 

Almond Flour – Almond “meal” will work but almond flour works better. My preferred brand is Bob's Red Mill


Butter – Unsalted grass-fed butter is my preference.

Superfood Turmeric Blend – I used Further Food Super Food Turmeric, you can also use a combo of ground turmeric with a pinch of ground cardamom and a pinch of cinnamon.


TOOLS YOU WILL USE:

Large mixing bowl
Baking dish – either 8×8 or an oval 9″ will work

HOW TO MAKE A FRUIT COBBLER – STEP BY STEP:

Start with your favorite seasonal fruit. Cobblers are super flexible allowing for creativity and seasonality. You will need about 4-6 cups of fresh fruit. For peaches and nectarines, I prefer to leave the skin on but feel free to peel them if you prefer.
Toss fruit with sweetness. You can use maple syrup, honey, coconut palm sugar, or regular sugar. 
Add a starchy binder. In this recipe I used arrowroot powder, cornstarch or just a bit of regular flour will also work. 
Make a biscuit topping. You can use any biscuit recipe you like, but I promise this golden milk biscuit does not disappoint! Made with almond flour and arrowroot, it is just cakey enough, with flecks of butter that melt into the fruit. 
Scoop the biscuit topping over the fruit, this does not need to be done perfectly it is a rustic dessert.
Bake in the oven until browned and bubbly.
Serve with vanilla ice cream!



WHATS THE DIFFERENCE BETWEEN A COBBLER, CRISP, CRUMBLE, and BUCKLE?

Crisp: A crisp is a fruit dessert with a topping made of oats, flour, butter and sugar

Crumble: Similar to a crisp, but typically the crumble topping does not contain oats

Cobbler: Fruit dessert with a biscuit-style topping.

Buckle: Fruit and cake baked together with a streusel topping

Vegan – Replace butter with coconut oil or vegan butter

Paleo – This recipe is paleo-friendly. Use a dairy-free ice cream and if you don't tolerate butter replace it with coconut oil.

Ingredients


4-6 cups fresh fruit peaches, blueberries, raspberries


3 tbsp coconut palm sugar


1 tbsp arrowroot powder



Golden Milk Biscuits


2 cups almond flour


1/4 cup arrowroot powder


2 tsp baking powder


1/2 tsp baking soda


1/4 tsp sea salt


2 tbsp coconut palm sugar


1 tsp Superfood Turmeric Blend or 1/2 tsp turmeric + 1/2 tsp cinnamon


4 tbsp cold butter


2 large eggs


3 tbsp oat milk or any non-dairy milk


1 tsp almond extract





Instructions

Prepare Fruit: Core and slice peaches. I leave the skin on but you are welcome to peel as well. Wash blueberries and raspberries, toss together with peaches.
Toss fruit with coconut palm sugar and arrowroot, set aside.
Prepare biscuits. In a food processor combine all dry ingredients (almond flour through turmeric) pulse to combine. Add cold butter diced into small cubes. Pulse to combine or until butter resembles small pebbles,
In a small bowl whisk together milk, eggs, and almond extract. Add to dough and pulse to combine.
Add fruit to a large baking dish (either 9" oval or an 8x8 square) Using a cookie scoop, scoop biscuit batter on top of fruit.
Bake at 350° for 20 minutes or until biscuits are browned and fruit is bubbling.
Serve with vanilla ice cream.




Notes

NOTES:
You can make this recipe without a food processor, simply cut the butter into the dough using two butter knives.

Cut butter into 1 tbsp sized slices.
Working in an opposite slicing fashion literally cut the butter into the flour until you have tiny bits of butter.

FRUIT VARIATIONS:
Use any fruit you like, stone fruit like plums, peaches, nectarines, and apricots work very well as do all berries.
