Christmas Energy Bites

Every year in the month of December, we fancy the zing of Christmas. Vivacious cravings for Christmasy flavours get into our world. The charm of festive spirit captivates our inner infatuation for good food, lights, those red and green tinctures around us. I am in so much Christmas seize, that I seriously desire a slice of Christmas cake right now. But, guess what, I still have not baked my Christmas cake. Its a doleful feeling within me.

For now today, I have a very interesting, healthy recipe for you with the name Christmas Energy Bites that mimics all those Christmas flavours.

Before we, go ahead, here are a few points I would like to share with you about this recipe. As this is 100% experiments, I had made a few mistakes in the process of making. I like to share with you, so you can escape those slips.

Oats hold a leading place in the ingredient list, as per the measurements. They give the volume and structure to the bites. If you lightly roast the oats before adding them with the rest of the ingredients, they will taste better. You can oven roast them or do it on a pan over a medium-low flame. Be careful not to burn, and keep stirring when you are using a pan to do the job.

I have used dates as a binder in this recipe. Deseed and chop then before adding them to the blender.

You will reduce the work of the blender blades, as they can wear-off. Dates are thick, firm and sticky, chopping them into smaller bits is the better way to mush them further in the blender.

You can choose the nuts and seeds of your choice for making these healthy Christmasy bites. Walnuts, almonds, cashews, pistachio, pecans, hazelnuts, pumpkin seeds, flax seeds, sunflower seeds, there are so many options. I have also oven-roasted the nuts and seeds before using them in this recipe. After roasting, you get that intense, nutty flavours. I always find this bewitching drag in the roasted nuts and seeds that make me devour more.

If you feel a bit sluggish about roasting, you can use them without roasting as well. There are no set rules, in this case, free-will works.

One crucial part of roasting nuts and seeds need your attention here, and that is dont over brown or over roast them. Because in the end, we want the Christmas warm spice to shine more in the recipe.

This is a very flexible, versatile and forgiving recipe. You can choose to use the nuts/ seeds you like. The quantity of the ingredients can easily be calibrated.

When you add rum soaked dry fruits to the rest of the ingredients, make sure not to take the liquid from the jar.

Ingredients

1 cup rolled oats roasted

1/4 cup almond butter (or other nut butter)

5 Tbsp. honey

1 tsp. orange zest

1/2 tsp. almond extract

1/4th cup of pecans

1/4th cup of almond

1/4th cup pistachio

1/4th cup mixed seeds

20 pitted dates

1 teaspoon of cinnamon powder

1/2 teaspoon of ground ginger

1/4 teaspoon of ground clove

1/4 teaspoon of ground nutmeg

A pinch of salt

1/4th cup of rum-soaked dry fruits

Method

Addnuts in the processor and pulse it till roughly chopped. Add in chopped dates and run the blender till it combines. Now add rest of the ingredients in the food processor and run it till you get a ball of batter. Using a tablespoon, scoop out dough and use your hands to roll it into a ball. Place it on the baking sheet and repeat until all the dough has been used. Use small paper cups to serve the Christmas Energy Bites. Enjoy a Christmasy healthy treat this season.
