Mexican Chicken – This is an easy way to cook Mexican chicken on the stove. It’s flavorful, and delicious, and can be used to make many meals. Use the cooked shredded or cut-up chicken meat for tacos, tostadas, enchiladas, quesadillas… It’s so good! On this day I used the cooked chicken meat for tostadas and I’ve even added the leftovers to make quesadillas and Mexican chicken soup, since there is only 3 of us. The recipe will serve six.
Use the cooked chicken breasts by shredding the chicken or cutting up the meat for making your favorite Mexican dinners at home. Adjust the seasonings to your preferences.

We have so many easy chicken recipes to make for dinner. We really enjoy flavorful foods, but the recipes are easily adapted and you can make them at any spice level you like.
Mexican Recipes To Make At Home
These recipes are inspired by Mexican Recipes and our love for Mexican food.

How To Make Mexican Chicken
Ingredients:
- 1.75 pounds of chicken breast (boneless, skinless, breasts)
- Olive Oil
- McCormick’s Grill Mates Montreal Chicken (or get the set of seasonings)

Note: if you don’t have these spices you can pop over to see what seasonings are included in the blend and add them. Or use spices like Mexican Fiesta Seasonings Blend. - Paprika
- Salt and Pepper
- 1 Chicken Bouillon Cube
- 1 can El Tapo Salsa de Jalapeno
And measure water in the empty El Tapo can (7.5 ounces water) - 1 14.5-ounce can of Diced Tomatoes
- 3 tablespoons of (1) 7-ounce can of roasted diced green chiles (reserve the rest for topping your tostadas or…
- 1 teaspoon seeded, deveined, and minced jalapeno (optional)
Recipe Notes: You can use what ever heat level of green chilies you prefer. If you don’t have salsa de jalapeno you can use a 7-ounce can of tomato sauce and add half to whole fresh seeded, deveined minced jalapeno. 2 pounds of cooked meat will serve 6 people.
This recipe can be doubled and made in a larger pan.
How To Season Mexican Chicken?
Additionally, if you don’t have the spices I used you can use any of these spices listed below to season the chicken meat and then follow the recipe below!
Additional spices can include cayenne powder to add spiciness. Use it sparingly if you prefer milder flavors. Paprika, Cumin, and Oregano are just a few commonly used spices used in Mexican cooking.
Note: Use smoked paprika for grilled or roasted chicken.
Using Mexican spices in addition to the salsa de jalapeno and diced tomatoes will give you a flavorful, delicious, and wonderful flavor to the Mexican chicken. As always, adjust the seasonings to your liking.

How To Cook Mexican Chicken on the Stove Top
- Add 1-2 tablespoons of olive oil to the non-stick pan or another pan. Turn the stove on to a medium heat.
- Next, add the chicken breasts to the pan with olive oil.
How to season Mexican chicken? - Add the spices by sprinkling the Montreal Chicken on one side, coating it well.
- Flip the chicken over and add the Roasted Garlic Herb seasonings on the other side, coating it well.
- Next, add the Paprika generously (view image as a reference), salt, and pepper lightly.
- Open and add the canned tomatoes, salsa de jalapeno, 3 tablespoons of diced green chilies, and optional diced jalapeno. Stir, and add in a small amount of water (7-ounces). Reduce the heat to low and simmer with the pan covered!
- Let the chicken cook in the sauce until the chicken is tender and reaches an internal temperature of 165 F. degrees.
- When fully cooked, tender, and juicy shred or cut up the chicken breasts.
- Return to the sauce and use the chicken for tostadas, tacos, enchiladas, and soup…
If using bone in chicken you will need to cook it longer and take the chicken meat off the bone before using it.
On this night I made chicken tostadas with Mexican chicken. If you decide to do that you will need additional ingredients (shown below). Or you can just serve the chicken over Mexican rice or white rice. Then add shredded cheese if you like. There are so many ways to use this recipe! We listed additional ideas later in the post.

Can you make Mexican Chicken vegetarian?
You can substitute chicken breast with a vegan meat substitute (Just Like Chicken) or (Plant Basics Hearty Plant Protein) and cook it according to the package directions and then add it to the sauce. Or make the sauce and add it in according to the package cook time instructions. It will have a shorter cook time than uncooked chicken breasts.
Chicken Tostadas Recipe
Ingredients:
- Precooked chicken (or vegan meat substitute) using the recipe above (or use a rotisserie chicken shredded up).
- Prepared Mexican/Spanish Rice or Mexican Style Rice like this
- Tostada Shells (Tostada Shells our favorite at Target)
- Refried Beans or Vegetarian Refried Beans (use about (1)16-ounce can per 3-4 people)
- Taco Sauce
- Lettuce
- Cilantro (for garnish)
- Diced Tomatoes
- Avocados or Guacamole – This is an easy homemade guacamole recipe!
- Diced Roasted Green Chilies
- Shredded Mexican Style 3 Cheese Shredded Cheese or Cueso Fresco Cheese
or or Cotija Cheese - Sour Cream
Instructions:
- After your Mexican chicken and Mexican rice is prepared: Heat up the can of refried beans by adding a little water (1/4-1/2 cup depending on the size of the can of beans) to them (to make them creamy in texture) and stirring until heated.
- Take out the tostadas and add a layer of beans, taco sauce (or other red sauce) Mexican rice (optional), and Mexican chicken.
- Top with your favorite ingredients: shredded lettuce, green chilies, shredded cheese, sour cream, avocados, diced tomatoes… And garnish with cilantro if you like.

What to make with Mexican Chicken?
There are so many delicious dishes you can make with Mexican chicken. Here are a few popular options:
- Chicken Enchiladas: Roll shredded Mexican chicken into corn tortillas: Then top with enchilada sauce, cheese, and bake until the cheese is melted and bubbly.
- Chicken Fajitas: Sauté sliced Mexican chicken with bell peppers and onions in a skillet. Serve with warm tortillas, guacamole, salsa, and sour cream.
- Chicken Tacos: Fill soft flour or corn tortilla or crispy corn taco shells with Mexican chicken: then add your favorite toppings such as lettuce, tomato, cheese, salsa, and cilantro.
- Chicken Tortilla Soup: Make a flavorful broth by combining Mexican chicken, tomatoes, broth, corn, black beans, and spices. Top it off with crispy tortilla strips, shredded cheese, avocado, and lime juice.
