Fusion Mexican Seaweed Tacos (Keto)

I know what you’re thinking, but fusion Mexican Seaweed Tacos are awesome and keto-friendly.

The flavours of Korea and Mexico in the seaweed tacos seemed as if we bought them from a food truck.

Come on, let me show you how we made these.

Buying Organic Korean Seaweed or Sea Greens

We bought Kirkland Organic Seaweed Snacks from Costco and found seaweed at Food Basics in the International aisle.

Both are equally as delicious, although we do favour the Costco organic seaweed snacks the best.

Check out local Asian stores in your area, as you’ll likely find seaweed snacks available.

Seaweed snacks are inexpensive, with zero carbs and fibre in each paper-thin snack.

Seaweed Mexican Tacos was a last-minute idea Mrs. CBB had, and it works.

Typically when we make a Mexican taco beef mince, we use a low-carb tortilla wrap, but we were all out.

I was just happy loading my plate up with the taco beef and adding all of the fixings.

I’m easy that way, and so is Mrs. CBB until she had this idea to make Seaweed Tacos.

The idea is to use the seaweed as your taco shell, and although I was skeptical, they were delicious.

Our friends who moved to Japan came over for drinks and snacks before leaving a couple of weeks ago.

We were sitting out back talking about good times and memories and brought out some snacks.

Although they were not keto, we brought a variety of snacks which included the seaweed tacos.

They laughed when they found out what they were, and the best part was the thumbs up.

Not only were the seaweed tacos a hit, but they also said we had given them an idea for future uses of seaweed.

According to the nutrition label, you’ll find many health benefits, including fibre.

Seaweed contains a wide range of vitamins and minerals, including iodine, iron, and calcium. Some types can even contain high amounts of vitamin B12. Moreover, it’s a good source of omega-3 fats.

Seaweed is an acquired taste, and at first, I wasn’t sure if I would like it, but I do.

You can also crisp them up slightly in the oven over soups or your favourite dishes for added nutrition.

How To Make Mexican Seaweed Tacos (Keto)

Since there were four of us, I used 1lb of lean ground beef in a frying pan with a splash of olive oil.

I cooked the beef mince on medium heat until it was cooked through and drained any excess fat.

From there, I added my homemade keto taco seasoning, salt, pepper, and a splash of lemon juice.

Adding a bit of acid to minced beef when I make tacos always seems to give it a bit of zing.

While the beef was cooking, I prepared all the sides for the tacos as listed above.

Ultimately you can add any flavours or toppings that you’d like to your tacos.

I also made homemade guacamole on the side and Keto Garlic Parmesan Mayo, also known as baconaise.

I cooked up 1 cup of rice along the sides, making enough for the three non-keto eaters.

Overall, a hit and something we will serve again as a snack when guests come around.

I would suggest having small hard or soft tortillas available if a guest opts for a different taco shell.

You can buy or make mini pitas, which would work great too since they are small.

Fusion Mexican Seaweed Tacos (Keto)

Ingredients

  • 4 packages of Organic Seaweed (I package per guest)
  • 1lb of minced beef
  • 2 cloves of garlic
  • 3 tablespoons of taco seasoning or 1 packet
  • 1/3 cup cold water
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • Half white onion sliced thin
  • 2 tablespoons extra virgin olive oil

Taco Toppings (see the complete list of ideas above)

  • 2 cups shredded old cheddar
  • 1 cup of sour cream
  • Hot sauce
  • Spring onion chopped
  • 2 cups of cooked rice if using rice

How To Make The Taco Filling

  • On medium heat in a large frying pan add the olive oil, garlic, onion and beef and fry until the meat is done. About 15 minutes.
  • Drain any excess fat
  • Add the taco seasoning and 1/3 cup of cold water, salt, pepper, and mix until the sauce thickens up.
  • Pour into a large serving bowl
  • Have all the toppings you would like ready for your guests in a bowls with utensils so they can build their tacos.
  • If there is no guests lay the seaweed sheets down on your plate and add 1 tablespoon of the taco beef and any toppings you’d like.
  • Fold the taco in hand and smash it all at once.
  • No bites just eat it all in one go and I promise you’ll be back for more.

I tend to make the tacos a few times as long as I will be eating them right away.

The seaweed will start to absorb any moisture, so don’t let them hang around; eat em up!

Fusion Mexican Seaweed Taco snacks are keto and are full of flavours and your favourite toppings.

Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes

Ingredients

  • 4 packages of Organic Seaweed (I package per guest)
