Cherry Bakewell Flapjacks

Delicious cherry bakewell flapjacks. These easy to make baked oat bars are made from porridge oats, filled with cherry jam and topped with flaked almonds.

Folks as you know I'm a huge lover of anything cherry bakewell so today's cherry bakewell flapjack recipe shouldn't come as anything of a surprise.

But I know you love these delicious flavours too. I've known that ever since the amazing popularity of my cherry bakewell loaf cake!

Now I'll admit that flapjacks aren't the most healthy food. They usually use golden syrup as a binder in the recipe.

However just like in my recent easy healthier flapjacks recipe I've removed the syrup and replaced it with honey instead.

So whilst this still isn't a completely healthy cherry bakewell flapjack recipe it is at least slightly healthier than the other bakewell flapjack recipes you might see.

There's absolutely no loss of taste or flavour here either. You still get the sweet cherry flavour and the chewy flapjack texture you would expect!

It's basically a bakewell tart flapjack!

Let's not forget the almonds here either. I mean bakewell tarts wouldn't be without those would they?

These cherry bakewell flapjacks are packed full of ground almonds and almond extract and topped with crunchy flaked almonds.

The delicious almond smell whilst baking is intoxicating!

Not only is this is such a delicious recipe to taste but it's just a joy to bake too!

Ingredients

  • Unsalted Butter or Cooking Margarine
  • Soft Light Brown Sugar
  • Honey
  • Porridge Oats
  • Ground Almonds
  • Almond Extract
  • Cherry Jam
  • Flaked Almonds

Step By Step Instructions

Detailed instructions are the recipe card below. But here is a quick step by step guide of how to make cherry bakewell flapjacks:

Step 1 & 2

  • Before you start making the flapjack mix, preheat oven to 180C degrees (Fan).
  • Grease and line the bottom and sides of a square baking tin (see equipment list) with greaseproof / nonstick parchment paper.

Step 3

  • In a medium pan, gently melt the butter / margarine, sugar and honey over a low heat until softened.

Step 4

  • Stir in the oats

Step 5

  • Remove from the heat and stir in the ground almonds and almond extract.

Step 6 & 7

  • Spoon half of the oat mixture into the prepared baking tin and press down all over.
  • Spread the cherry jam over the oat mixture but leave about 0.5cm around the edges.

Step 8

  • Spoon the remaining oat mixture over the jam and press down all over again. Then sprinkle over the flaked almonds.

Step 9 & 10

  • Bake for about 20 minutes on the middle shelf of your oven until golden brown.
  • Remove from oven, mark into 9 squares whilst still hot, then remove from the pan when cool and using a sharp knife carve into 9 squares.

Substitutions

Unsalted Butter or Cooking Margarine - use vegan butter if you want to make this vegan.

Soft Light Brown Sugar - you could substitute with dark brown sugar but light is best.

Honey - a budget runny honey is fine. You could use maple syrup or agave syrup.

Porridge Oats - a budget bag of breakfast porridge oats is fine. Don't use quick cooking oats or jumbo oats It's rolled oats you want to use here.

Ground Almonds - essential

Almond Extract - you could use almond essence instead but extract is better.

Cherry Jam - any kind of good cherry jam is fine. I use Morello Cherry Conserve.

Flaked Almonds - you could omit but it would be a shame to.

How long do bakewell flapjacks last?

The flapjacks will keep in an airtight container for up to 10 days. They are best kept cool and can be stored in the fridge which will help them hold their shape.

Why have my flapjacks fallen apart?

Slicing them into squares whilst they're still warm can often cause them to fall apart. Instead, score the slab in the tin into 9 squares and then place the tin in the fridge. This will cool them quicker and help them hold their shape.

Why are my flapjacks dry and crumbly?

If the mixture continues to be crumbly then you may have to increase slightly the amount of honey in the mixture until you get a lovely chewy texture.

Can I freeze flapjacks?

You can freeze flapjacks. Wrap each square in plastic wrap and place it in the freezer. Ensure it's thoroughly defrosted before eating.

Are flapjacks healthy for you?

A traditional flapjack will usually contain high levels of sugar, syrup and butter. Whilst those amounts are reduced or removed in these are healthier flapjacks they should still be enjoyed as a tasty treat in moderation. The cherry bakewell flapjack calories are 232 calories per slice.
