For this fish dinner idea – I made sheet pan fish sticks using cod fish. For optional fish cuts, you can use tilapia, halibut, or other types of white fish (boneless, skinless). You will need a sheet pan with a higher edge. I just used my Wilton sheet pan. Aluminum foil makes clean-up easy! I like to line my sheet pan. And a cooking spatula or tongs. A fork and two bowls.

  1. Preheat the oven to 425 degrees
  2. Line a sheet pan with aluminum foil, spray it with non-stick spray, and set it to the side.
  3. In one bowl, crack the two eggs. Add a little milk. Whisk the egg and milk together.
  4. Add 1/2 a cup of flour and 1 cup of Italian bread crumbs and combine them with a fork in the other bowl.
  5. Sprinkle all the cut-up fish (on one side) with a coating of an all-seasoning blend and (additional) garlic powder.
  6. Dip the fish one by one into the egg mixture (coating both sides). Coat them with the breadcrumb mixture (coating both sides). Repeat for each piece of fish. Adding the breaded fish to the prepared sheet pan.
  7. Once the fish pieces are all breaded – sprinkle them with paprika. This will not only give it flavor but, give it a nice golden brown color.
  8. Set the sheet pan with the breaded fish into the oven, and bake for 5 minutes. While they start to bake; melt 3-4 tablespoons of butter in a microwaveable bowl.
  9. Carefully take out and pour the butter around the pieces of fish. I also added a little drizzle of olive oil around the fish.
  10. Bake until the fish reaches an internal temperature of 145F degrees. (And the breaded fish is golden brown and crispy).

Recipe Notes

NOTE: Flip the baking fish halfway through the baking process. About 5-10 minutes after adding the butter. And finish baking them until the fish is cooked to the proper internal temperature (145F).

Cook Time May Vary Due To Oven Temperature, Altitude, And Thickness Of The Fish! Check the breaded fish when baking, and flip them halfway through. And use a cooking thermometer to gauge when the fish is fully cooked. This will ensure it’s tender and flaky inside and cooked to Food Safety standards.

Breading For The Fish Recipe

Of course, if you prefer to measure the seasonings and add them to the breadcrumb seasoning you can. I would recommend 2 teaspoons of all-seasoning, 1/2-1 teaspoon of garlic powder, and 2 teaspoons of paprika to start. Since I sprinkled the seasonings on the fish this is only an approximate measure. Adjust to your liking.

You can use Panko instead of Italian bread crumbs. If you do, I recommend adding Italian seasonings to the breading mixture.

How to cut your fish up into fish sticks?

The difference with my fish is some pieces were thicker and some thinner. I cut mine all to be similar thickness so they would be done at the same time.
