A Classic McDonald’s Big Mac Turned Into A Keto Big Mac Meatloaf
On the menu today is a homemade Keto Big Mac Meatloaf and before all of you, non-keto eaters freak out, don’t.
Hear me out because with a couple of changes this recipe can transform into a regular Big Mac Meatloaf.
Honestly, don’t be afraid of the word keto.
It just means sugar-free, gluten-free and high-fat.
I’m a huge fan of the Big Mac and although we don’t eat out often when we do go to McDonald’s for a treat with our son I get a Big Mac.
Creating The Keto Big Mac Meatloaf
I had this grand idea last week to make a Big Mac Meatloaf for us since we both like ground beef and a good burger.
Making a Keto Big Mac Meatloaf was fairly easy with the addition of crushed pork rinds in place of breadcrumbs and allulose in place of sugar.

The reason I like their pork rinds as they are light and airy and not heavy like those in the grocery store.
That’s the only difference apart from using cheese slices as you’ll find in a traditional Big Mac we used a mix of shredded old and medium cheddar.
By all means, if you are not Keto or Sugar-Free you can substitute breadcrumbs, sugar and cheese slices.
You will notice in the recipe below I’ve noted each ingredient that you can substitute to make this a non-keto Big Mac Meatloaf recipe.
Big Mac Ingredients
The first thing I needed to do was write down what the Big Mac ingredients were so I had an idea where to start my recipe.
From eating experience, haha I knew that a Big Mac was layered like this…
Soft three layer sesame bun Big Mac Special Sauce 2 thin burger patties Sliced Pickles Sliced Cheese (the kind most kids like for grilled cheese) Shredded Iceberg lettuce Diced white onions
Honestly, there’s not much to it and very simple to make a Big Mac Burger at home instead of heading to McDonald’s.
Big Mac Sauce Recipe
The tricky part was making a traditional Big Mac Sauce keto-friendly.
Big Mac sauce ingredients aren’t hard to find nor complex which made this a simple recipe to transition.
What this meant was substituting a sugar-free sweetener instead of granulated sugar in the sweet pickle relish.
You can also buy sweet pickle relish at your grocery store in the condiment aisle.
I know some of you who are into canning may have a different version and that will work equally as well.
You can even watch a YouTube video of McDonald’s executive chef Dan Coudreaut who shares how to make a McDonald’s Big Mac at home.
What I found funny was that the secret Big Mac sauce isn’t really a secret and has always been available on the McDonald’s website.
Ah, the things you learn.
Remember, fast food is just that, fast and it’s for people who don’t want to cook, don’t have the time or don’t know-how.
There’s no reason why McDonald’s would need to hide their Big Mac recipe since they own it and everyone knows it.
Simple Keto Sweet Pickle Relish
This makes about 1 small jar of keto sweet pickle relish that you can keep in the refrigerator for about a week.
There is no pickling or canning of this sweet pepper relish however if you do have homemade sweet pepper relish that works perfectly, if not better.
I’m just making the quick and easy version for those of us who aren’t into canning.
1/2 cup finely diced dill pickle 1/3 cup finely diced red bell pepper 3 tbsps granulated sugar or sweetener of choice (keto) I used allulose 1 tsp paprika 1 tsp onion powder 1 tsp garlic powder 1 tsp ground mustard 2 tbsp finely chopped white onion 1 tbsp apple cider vinegar
Add all of the ingredients into a bowl and mix well and set aside so the ingredients have time to come together.
Keto Big Mac Sauce
1 cup homemade mayonnaise or store-bought or Keto Coconut Mayo 2 tsp yellow prepared mustard 1 tsp apple cider vinegar (We use mother-earth from Costco Canada) 1 tsp paprika 1 tsp onion powder 1 tsp garlic powder 3 tbsp sweet pickle relish (see keto recipe above) or store-bought Bicks Sweet Pickle Relish
Add all of the ingredients of the Keto Big Mac Sauce to a bowl and mix until combined.
Set aside while you make the Big Mac Meatloaf
Keto Big Mac Meatloaf Ingredients
In a large bowl add 2lbs of ground beef (I used medium ground beef) Add 1 cup of crushed plain pork rinds. (I used Buster Rhinos Salted Pork Rinds) or Breadcrumbs (non-keto) 1 large egg 1 tsp salt 1 tsp garlic powder 2 tsp onion powder 2 tbsp sugar-free ketchup or ketchup (non-keto) 2 tbsp Worchestershire sauce 8 Kraft cheese slices (non-keto) or 1 cup shredded/cubed old or medium cheddar cheese (depends on your cheese tolerance) How To Make Keto Big Mac Meatloaf
You will need a 9.25 x loaf pan lined with parchment paper or 2 small deep loaf pans In a large bowl add all of the ingredients but the cheese and combine just until mixed without over-mixing. Divide the mixture into two bowls. Press half of the mixture into the bottom of your loaf pan. On top of the ground beef mixture add all of the cheese. Press the remaining half of the ground beef on top of the cheese. With your knife make a slit across the top of your meatloaf. Cover with tinfoil and Bake in a 350-degree oven for 45 minutes then uncover the last 15 minutes. Total 60 mins. Remove from the oven and let the meatloaf rest before removing it to a large platter (remove parchment paper) The resting allows you to slice the meatloaf easier and the juices flow back into the meat. Slowly pour your prepared Big Mac sauce over the top of your meatloaf so it coats it. Easy Keto Big Mac Meatloaf

Finally, add shredded iceberg lettuce as a garnish on the side or for each slice of meatloaf you serve.
You can also serve with a keto-friendly garden salad as I did with mine.
