If you haven’t realized it by now we are both cookie fanatics and work to create some of the best and easiest keto cookie recipes around.

We’ve made many keto cookies over the years and have been working on perfecting our soft and cakey keto chocolate chip cookies.

It’s amazing how 1 ingredient can change an entire cookie so it’s important to follow the recipe using key ingredients as directed.


Gluten-Free And Soft Chocolate Chip Cookies
No Gluten! That’s right these beautiful gooey keto cookies have zero gluten so perfect for those that are gluten-free.

Depending on the day we might want crispy keto chocolate chip cookies and other days we want soft. 

What we love about these keto soft chocolate chip cookies is that you can customize them any way you like. 

By that I mean if you want to add walnuts or pecans, cacao nibs, sugar-free white chocolate chips or any other favourites you can.

The best part is that you can freeze these keto soft chocolate cookies and take them out of the freezer one by one.

Honestly, that’s the only way we can control ourselves from eating too many and messing up our macros.


The Flours
What is Oat Fibre?

When we bake just about anything that is gluten-free we use a variety of flours but we also tend to use oat fibre.

If you’ve been on a keto diet you know that constipation is a big deal so adding fibre into your diet is always a good thing.

We like to hide a tablespoon into our keto soft chocolate chips to boost fibre and lower net carbs.

Oat Fibre has no taste and you won’t even know it’s there.

We use Anthony’s Oat Fibre in our house which is inexpensive and easy to find on Amazon Canada. 
What is Oat Hull Fiber? Oat hull fiber is an ingredient made by grinding and purifying the outermost protective layer of the oat grain.
It consists mainly of lignin, cellulose and hemicellulose and, thus, is considered a rich source of insoluble dietary fiber (up to 90%).
When added to foods, beverages and baked products, oat hull fiber can:

Boost the fiber content

Reduce caloric value

Provide desirable textural properties

Be used in gluten-free formulations
What is Almond Flour?
The most popular gluten-free flour that we use in our house is Almond Flour which we buy from either Costco or Amazon Canada.

Our favourite Almond Flour is the Kirkland Almond Flour or the Bob Mills Almond Flour.

Always remember that there is a difference between Almond Flour and Almond Meal.

Almond Meal has blanched almonds with the peels still on so you get a coarse type of grind to it.

We like to use almond meal as a substitute for breadcrumbs or toppings for our casseroles.

On the other hand, almond flour is just the blanched almonds so you get a fine powder-like regular flour although it’s not milled just ground.

So, depending on the recipe that you are making it may either call for almond flour or almond meal.

Both of which you can easily make at home with blanched almonds if you have the time.
What is Coconut Flour?
Coconut flour is the by-product of the pulp leftover from soaking the meat to make coconut milk.

Once dried it is ground into coconut flour which we use in this recipe.

Coconut flour tends to soak up moisture quite easily so use as directed.


The Sweetener
Almost always we use erythritol in our baking along either ground up in our coffee grinder or whole sugar crystals.

Erythritol is a natural sugar part of a class of sugar alcohols that tastes like regular sugar but it has zero calories.

Personally, we find that if we buy the granules and grind them ourselves it goes further for our money.

We also notice that you remove the grainy texture from products when you use the powder form of erythritol.

This is just a personal preference however we find for this recipe erythritol powder works best.
Brown Sugar vs. White Sugar
Another sweetener that we use for these keto soft chocolate chip cookies is Sukrin Gold.

Adding brown sugar to cookies will offer a chewier cookie as it retains moisture.

Sukrin Gold is an all-natural substitute for brown sugar that is sugar-free and a bit pricey although it goes a long way.

I think every keto pantry should have a bag of Sukrin Gold and Xanthan Gum so order them online for everyday keto recipes.


The Keto Chocolate Chips
Two of the most popular sugar-free chocolate chips in Canada right now are Lily’s and Krisda.

We’ve tried both and prefer the Krisda sugar-free chocolate chips over Lily’s brand both sweetened with Stevia.

You’ll find that the Krisda chocolate chips are bigger and sweeter than Lily’s similar to dark milk chocolate chips.

The Lily’s sugar-free chocolate chips are small made with 55% caca0 and stevia-sweetened.

You may find that they taste like dark chocolate with hints of sweetness.

It really depends on your taste buds as to which brand of sugar-free chocolate chips you prefer.


How To Make Keto Soft Chocolate Chips Cookies
These really are the perfect keto cookies when you are craving something filled with gooey chocolate.


Gooey Keto Soft Chocolate Chip Cookies

Chewy and Soft Keto Chocolate Chip Cookies with melted gooey chocolate chips throughout are the ultimate Keto treat. When you are in the mood for something sweet keep a batch of these cookies in your freezer and take one or two out as needed. Author: Mr.CBB Recipe type: Keto Cuisine: Desserts Serves: 20

Ingredients 1 cup Almond Flour 2 Tbsps Oat Fibre 4 Tablespoons Coconut Flour ½ teaspoon baking soda 1 teaspoon baking powder ½ teaspoon salt 1 Tbsp Xanthan Gum 6 Tbsps softened Butter ⅔ cup ground erythritol or Swerve 2 Tbsp Sukrin Gold Brown Sugar 1 Tsp Pure Vanilla Extract 2 large eggs ¾ cup of sugar-free stevia-sweetened chocolate chips

Instructions Pre-heat oven 350 degrees In a large mixing bowl add all of your dry ingredients, flours, baking powder, baking soda, oat fibre, xanthan gum, salt. In a second bowl add your softened butter, vanilla extract, erythritol, brown sugar and beat until fluffy. Add your two eggs in one by one and beat until incorporated. Combine the dry mixture with the wet mixture and mix until it forms a cookie dough. Manually fold in your Stevia-sweetened chocolate chips to evenly distribute. I keep about 30 chocolate chips back to press into the tops of the cookies before they bake which is optional. Wrap and refrigerate the cookie dough for 20 minutes. On a large baking sheet add Silpat mats or parchment paper. You can also spray a non-stick baking pan if that's all you have. Using a melon ball scoop begin scooping balls of chocolate chip cookie dough and rolling them into balls. Spread evenly apart on the baking sheet and gently press down on each followed by adding a few of the chocolate chips you left out. Bake in the oven for 8-10 minutes. Do NOT overbake. Even if they don't look done, they are done. Let cool completely and enjoy. Depending on how big you make the cookies your yield may differ.
