This versatile Baked Potato Egg Casserole has been created and tested in its entirety by myself.
By that I mean I had to eat the entire recipe that took me a few days since no one else eats potatoes here.
Saying that it has gone viral in my recipe box because of how simple it is to make and flexible with ingredients.
At the time I created this Mrs. CBB was fasting so she wanted nothing to do with it but she said it smelled good.
Keto-Friendly Potato Egg Casserole
When you embark on the keto lifestyle potatoes are a big no but the eggs are a huge yes.
That’s why I wanted to create something dead-easy to make on a weekend morning, breakfast or even dinner.
Include Your Favourite Toppings
The great part about making a baked potato egg casserole is that it’s flexible with the ingredients.
Having said that whether you are keto or not add
Ham, Salami, Proscuitto and so on.
Sausage
Mini-Meatballs
Bacon
Pasta or Pizza Sauce
Shredded cheese
Green peas
Corn niblets
Tofu
Thinly sliced vegetables.
Hey, you can even add cooked ground beef to the potato egg casserole as well.
I absolutely love recipes such as this which is why I wanted to post how easy it is to make a baked potato egg casserole.
From there you can create whatever flavour and ingredient profile that you like.
If you have picky eaters in the family or someone who doesn’t care for potatoes there’s a simple hack.
Don’t add them to that part of the casserole, it’s that simple.

Canadian Casserole Recipes For Newbies
I honestly think this is my first casserole on the blog and a running joke on my Facebook page about me.
The “What’s For Dinner” post that I’ve shared nightly for 9 years wanted me to make a Casa Roll Eh! Get it?
I’ve never made one before I that’s how I would spell it because it seems like such a popular Canadian recipe theme.
In the UK our popular recipe list is pretty small although I’ve always been open to a new cuisine.
My father on the other hand is not and even when my parents travel he still wants a proper Sunday dinner.
I’ve found that in Canada if you can make it and bake it you’ve just bought yourself time to do something else.
Cooking With Your Spouse Is Not Always A Smart Idea
Our kitchen isn’t that big compared to kitchen spaces built for new homes so we bang into each other.
Having said that I’m not so much a multi-tasker in the kitchen because that’s when I burn everything.
However, Mrs. CBB waves her hands in the air like Chef Emeril and tells me to get out.
When she means BAM she’s serious.
For some reason for multi-taskers people get in the way of their success and she’s probably right.
So, after 14 years I’ve learned that when she’s cooking I stay away and play with our son.
How To Make A Baked Potato Egg Casserole
Alright, let’s get to the fun part and let me show you how to make a baked potato egg casserole.

Ingredients:
12 large eggs
Mini potatoes (12) or 6 medium to large potatoes that you prefer
1/4 tsp of salt and pepper
Putting The Baked Potato Egg Casserole Together
If you are using baby potatoes as I did wash them and scrub any dirt off.
Slice each potato into 1/4 inch and put them on the baking sheet or roasting pan
Add 1/3 cup extra virgin olive oil or enough to coat the potatoes well.
Toss a sprig of fresh Rosemary (produce section at the grocery store, dried or fresh from the garden)
Note: If you use fresh Rosemary don’t forget to remove it before you add the eggs.
Add the salt and pepper
Mix the potatoes around and baked them until golden in a 375-degree oven.
Remove the baking sheet and let them cool for 5 minutes moving the potatoes around so they are flat.
Adding The Egg Mixture
If the family is involved and someone doesn’t want potatoes just keep a section plain with just eggs.
Add the big bowl of eggs right over the baked potatoes so they are covering each potato.
This is where the kids can come in and add whatever ingredients they like to their section.
Have them do it quickly by preparing ahead of time what each child wants in their section.
Bake at 350 until the eggs are fluffy and cooked through 10-15 minutes depending on your oven and pan.
Remove from the oven and let the casserole relax for 5 minutes.
Cut into squares and serve on its own or with a big dollop of sour cream and shredded cheese.
Add whatever you like or leave it plain as I did.

This is my most popular, viral recipe which is a simple and versatile baked potato egg casserole. It's a family-friendly recipe which means the kids can get involved adding creativity to their section of the recipe or add more or less of ingredients that I left examples for in my blog post. Enjoy
Ingredients
12 large eggs

⅓ cup extra virgin olive oil
Fresh or Dried Rosemary (optional)
Instructions
Preheat oven to 300 degrees
If you are using baby potatoes as I did wash them and scrub any dirt off.
Slice each potato into ¼ inch and put them on a baking sheet or into a baking pan
Add ⅓ cup extra virgin olive oil or enough to coat the potatoes well.
Toss a sprig of fresh Rosemary (produce section at the grocery store, dried or fresh from the garden)
Note: If you use fresh Rosemary don't forget to remove it before you add the eggs.

I flip the potatoes at the half-way mark to them being baked.
Remove the baking sheet and let them cool for 5 minutes moving the potatoes around so they are flat.
If the family is involved and someone doesn't want potatoes just keep a section plain with just eggs.
Add the big bowl of eggs right over the baked potatoes so they are covering each potato.
This is where the kids can come in and add whatever ingredients they like to their section.
