This is a magical homemade fluffy pancake recipe that you might want to try only because I’ve found the secret to making them poofy.
Canadian pancakes have been a treat for me ever since I met Mrs. CBB.
I have a little story for you.
Tasting Pancakes For The First Time
The first time we met in the UK she came to my house with a box of pancake mix and bottle of Canadian maple syrup.
I had never had Canadian pancakes before because what I called pancakes in the UK is what you call crepes in Canada.
Crepes are French and very thin pancakes that you can stuff, fill and roll with just about anything sweet or savory.
Somewhere on my harddrive, we have a photo of me making these boxed pancakes in my UK kitchen but I won’t bore you with that.
Anyhow, I fell in love with the pancakes and couldn’t get enough of the maple syrup.
Boxed Pancake Mix vs. Homemade Fluffy Pancakes
However, once I moved to Canada I tasted a delicious pancake recipe that Mrs. CBB made that was homemade.
No more boxes of pancake mix for this guy and I was on a mission to create the fluffiest pancakes ever.
Once I was able to taste a homemade pancake I found the boxed Aunt Jemima pancake mix to be bland and produced flat pancakes.
If you’re in a super rush and all you have is a box of pancake mix then use it but I have never bought it in Canada.
Finding The Right Combination Of Pancake Ingredients
I’ve been through SO MANY batches of pancakes over the last 10 years and tested recipes from Pinterest.
Finally, I can say that I’ve managed to create these magical fluffy pancakes that include only 8 ingredients.
Our son loves these pancakes and I don’t have to fuss about doing anything fancy.
One bowl, a griddle, spatula, measuring cup, 8 ingredients plus butter and maple syrup are all you need.

As mentioned above these fluffy pancakes only have 8 ingredients however you must use these same products.
The brand doesn’t matter as much as using the specific ingredients because that’s what makes any recipe unique.
Once you start substituting ingredients you potentially take away from the original intent of the recipe causing flaws.
You might ask yourself why Mr.CBB is using self-rising flour and then adding more baking powder.
The answer is, I don’t know but it worked and I’m sticking with it.
Pancake Griddle Is Essential For Fluffy Pancakes
We use a Black and Decker griddle that Mrs. CBB bought 15 years ago but the updated version is lighter and less expensive.
Initially, she thought that she’d never use the griddle but it’s been out more times than I can count.
The griddle also comes in handy if your stove is on the blitz or if you are renovating your kitchen and need something to fry on.
Fluffy Pancake Ingredients

1 Free Range Brown Egg Salted Butter (this is to put on the griddle)
Self-Rising Flour (we bought a small bag at Food Basics for $5.99) Organic Baking Powder Purest Baking Soda Salt Avocado Oil (We buy ours at Costco for $15.99 1 litre) Granulated Sugar (I used Truvia but either or is fine) White 2% Milk Canadian Maple Syrup Black and Decker Griddle or any griddle will do however I don’t get the same fluffiness by using a frying pan as the griddle cooks it evenly on a flat surface. Let’s make some magical fluffy pancakes, shall we?
Preheat your pancake griddle to 200 degrees In a large bowl add your dry ingredients leaving a well in the middle of the bowl. Add your egg, avocado oil and milk into the center and whisk then combine into the dry ingredients On your non-stick griddle add 1 tablespoon butter all over and you’ll do this every time you add a new set of pancakes. Use a 1/4 cup measuring cup to scoop out the thick batter onto the griddle. Using the measuring cup motion the batter so it forms a circle. Cook the pancakes until bubbles form on the top, then flip to the other side. About 2 minutes on one side and 1 minute on the other. Once finished topping your fluffy pancakes with butter, maple syrup, whipped cream, fresh fruits or jams is ideal
