A Simple Chocolate Chip Cookies Recipe That Never Disappoints
These are the Ultimate Chocolate Chips Cookies made from scratch and I called them Scookies.
No, not Snookies (ha) rather, Scookies and not S Cookies as in the Italian S-shaped cookies.
I know it’s an unusual name for chocolate chip cookies but trust me on this one.
I’ll explain.
What Are Scookies? – The Ultimate Chocolate Chip Cookies
I’ve made several versions of thick chocolate chip cookies over the years because that’s the way I like them.
These Ultimate Chocolate Chip Cookies are a cross between a British scone and a soft cookie hence the name, Scookies.
You heard it here first and I know these Ultimate Chocolate Chip Cookies will take off like a rocket.
With this in mind, the Scookies will be loved by all chocolate chip cookie lovers across the land.
Indeed, I’m biased but I ate the entire batch, SO I can confirm they are freakin amazing.
As you’ll notice they look like they are filled with semi-sweet chocolate chips.
Your observations are correct.
Scookies Portion Sizes
With this recipe, I made 8 large Cookies using a large ice-cream scoop.
However, you can make 12 smaller Scookies if you want to stretch the batch further.
Having the Scookies bigger means more Hershey’s Chipit’s chocolate chips per cookie far more than if I made 12.
You could also add more chocolate chips to the cookie dough batter and every cookie will be equally as gooey.
Ordinarily, I’m not one for measuring chocolate chips, so the choice is yours.
Cookies Treat For The Family
You won’t find nutritional information for these Ultimate Chocolate Chip Cookies because you probably won’t care.
However, if you do, simply work it out yourself with the ingredient list below.
Just eat one of these Ultimate Chocolate Chip Cookies and savor the moment.
Scookies pretty much go with any milk or hot beverage or you can eat them on their own.
For instance, I ate mine with a cold glass of milk one day and the next I had a cup of coffee.
The Scookies Ultimate Chocolate Chip Cookies are also peanut-free and the perfect treat to pack in your child’s lunch.
How To Make The Ultimate Chocolate Chip Cookies – Scookies
There are three secret ingredients in the Scookies recipe that allowed me to create these Ultimate Chocolate Chip Cookies.
I used powdered grass-fed gelatin in the cookie dough along with Brodie self-rising flour which is what we would use in the UK.
You can find Brodie flour in most Canadian grocery stores as we bought ours at Food Basics.
I know you will wonder why I’ve added baking powder when the self-rising has it included.
The reason for this is to have double-action so they are thicker chocolate chip cookies.
Specifically, I also added all-purpose flour for this reason.
Lastly, I added Kirkland Almond Flour which you can buy at Costco or on Amazon Canada.
There is also a banana in the cookie dough but you won’t taste it at all.
To explain the use of the very ripe banana was for added soft texture to the Scookies.
Scookies Ingredients
- 1 cup semi-sweet chocolate chips
- 1/2 cup mini chocolate chips
- 2 large eggs
- 1/3 cup soft butter
- 1/2 cup granulated sugar or 1/4 cup Truvia
- 1 tbsp pure vanilla extract
- 1/4 tsp salt
- 1 tsp baking powder
- 1/8 tsp baking soda
- 1 tsp corn starch
- 2 tbsps almond flour
- 1 cup self-raising flour or 1 cup all-purpose flour + 1tbsp baking powder
- 1/4 cup all-purpose flour
- 1 medium banana mashed
Instructions
Add all of the dry ingredients to a large mixing bowl and stir together
In a second large mixing bowl add all of the wet ingredients and stir to combine
Mix dry with wet without overmixing
Refrigerate the Scookie dough for 1 hour
Using a large ice-cream scoop form 8 large cookies on a parchment paper or Silpat lined large baking sheet.
Pat each Scookie down and bake them in your 350 degrees preheated oven for 8 minutes
Immediately remove from the baking sheet and let cool completely before eating
