The delicious aromas of this Simple Indian Coconut Curry Roasted Potatoes recipe are what curries are all about.

I’m a huge fan of curry and have tried so many curries from meat curries to vegetarian curries.

Today, I want to share with you a simple aromatic roasted coconut curried potatoes recipe which is a great side-dish.

You can also add to this curried potatoes recipe by including different spices, chickpeas, vegetables, meats, and cheese.

I wanted to give you a base recipe that you can try if you’re not familiar with curry.

Indian Food and Curry Roasted Potatoes



One of my favourite ways to enjoy potatoes is mashed with butter and gravy.

Growing up in England it was tradition to have Sunday Roast dinner with mashed potatoes, gravy and all the Fixin’s.

My parents didn’t have lots of money growing up so potatoes were a staple in our house and my mum prepared them often.

One of my favourite memories is her curry roasted potatoes not only for the taste but the aroma.

The Popularity of Indian Food

Indian food is as popular in the UK as Chinese food is in Canada so I grew up with many Indian friends.

So, every time I’d go to my friend’s houses their mums would make me eat. Haha, and I obliged because I love eating.

I think that’s where my love for Indian cuisine came into play and why I’ve travelled to India twice in my twenties.

Stopping at street vendors to try their local foods was the highlight of my holiday along with cultural exploring.

However, some of the best Indian cuisine that I had were not in restaurants but on the side-streets of India.

Besides, it was much cheaper to eat street food and talk to the locals than sit in a costly restaurant.

Potato Nutrition



Potatoes are life for me as I adore them and try to fit them in my diet once or twice a week.

Cooked Potatoes with the skins left on are a good source of potassium, fibre, folate, Vitamin B6 and Vitamin C.

Potatoes are a high-carb vegetable that can be starchy but with small amounts of protein and zero fat.

All potatoes have some form of sugar in them and rank high on the glycemic Index (GI).

What this means is that carb-rich potatoes turn to sugar in the body that will increase blood sugar in the body.

Nevertheless, potatoes in moderation and excellent for a healthy diet.

Types of Ontario Potatoes

During the summer months in Ontario, you can grow potatoes even in a pot if you don’t have the land or space available.

Long Potatoes – Russet Burbank, Russet Norkotah and Frontier Russet varieties with a white interior and rough brown skin. Popular for baking, mashing and French-frying.
Round Whites – Kennebec, Superior and Cherokee) or yellow (Yukon Gold with large, round or oval with light to medium skin
Round Reds – Chieftain, Rideau, Norland, and Sangre with rosy red, thin, glossy skins


The round whites and round red potatoes are firm, waxier in texture and perfect for boiling and steaming

Potatoes are native to North America and helped save famine in Ireland in 1740 and Russia in 1774.

However, even today potatoes are relatively inexpensive to buy at a cost of $4.99 for 5lbs or even less when on sale.

But, this is why potatoes are part of the family meal plans since they are versatile and can be prepared in a variety of ways.

Curry powder if you’re not familiar with it is considered a medicinal spice with many health benefits such as antioxidants which can help improve your gut health.

The most common and traditional ingredients of curry powder are coriander, sweet basil, cumin, turmeric, cardamom, and red pepper.

How To Make Homemade Indian Curry Powder



I always keep a bag of curry powder on hand just in case I run out of a spice I need to make my homemade Indian curry powder.

However, you can find curry powder for the best price at any Indian grocery store which is where I prefer to shop when I cook Indian dishes.

Almost all grocery stores carry curry powder or you can find Arvinda’s Curry Powder on Amazon which is delicious.

Always keep in mind when you are shopping for spices that quality does matter.

If you have all of the Indian spices in your spice cabinet you can make your curry powder as we do.

Easy Curry Powder Recipe

This is how we enjoy it but you can alter the taste if it’s too hot or too mild for your liking.


2 Tbsp ground turmeric
2 Tbsp ground coriander powder
2 tsp dry mustard
2 tsp ground ginger
1 tsp ground cinnamon
1 Tbsp smoked sweet paprika
1 tsp ground black pepper
1 tsp ground chilies
½ tsp ground mustard
1 tsp ground cardamom powder
2 Tbsp ground cumin powder
½ tsp ground cloves (optional)


Mix all of these dry spices in a bowl together then transfer them to an airtight jar.

That’s it, DIY curry powder is complete.

We tend to make little batches so the curry powder is fresh.

How To Make Roasted Coconut Curry Potatoes



I had about 5 large russet potatoes that needed using up so I washed, peeled and cubed them.

From there I par-boiled them for about 5 minutes in a large pot of salted, boiling water.

I transferred the potatoes to a colander to drain any excess water. 

While the potatoes were boiling I made my curry paste in my pestle and mortar. (Did you know I have a collection?)

Our pantry always has a supply of unsweetened organic coconut milk for all sorts of recipes including whipped cream, smoothies, ice-cream and sauces.

There’s not much to this recipe once you put it all together and it makes for a wonderful side-dish.

Curried Roasted Potatoes Ingredients


5 russet potatoes
1.cup sliced red onion
5 cloves garlic
3 tbsps curry powder
1 tbsp sea salt
1 tbsp black pepper
1 can coconut milk
2 tbsps butter
2 tbsps fresh ginger
1 tbsp extra virgin olive oil


Curried Roasted Potatoes Instructions



Pre-heat oven 250 degrees
Wash and peel your potatoes and cut into cubes
In a large pot filled with cold water and add your potatoes
Par-boil on med-high heat for 5-7 minutes, drain.
In a pestle and mortar add your peeled ginger, garlic, sea salt, black pepper and curry powder and mash to make a curry paste.
Coat the bottom of a large baking pan with extra-virgin olive oil
Add the potatoes and onions to the pan and mix the butter in to coat the potatoes evenly
Take the curry paste and mix into the potatoes and with your hand coat the potatoes with the paste
Stir in 1 can of coconut milk with a mixing spoon gently not to break any potatoes
Bake in the oven at 250 for 40 minutes.




 

Pairing Curry Roasted Potatoes

I enjoyed my roasted coconut curry potatoes with a giant sirloin steak that I marinated for 3 days and grilled on my Akorn Jr. Kamado BBQ.

If you remember I gave away our giant stainless steel gas bbq 2 years ago and bought the Kamado and it was the best investment I’ve made in BBQs.

The taste is amazing as it uses charcoal and takes up little space, easy to move around and enough grilling space for a family of 4.
